Sweet Potato & Chilli Chicken Salad

Healthy Balanced Diet

Serves 2


2 chicken breasts

1 tsp extra virgin olive oil

1 tsp paprika

1 red chilli, sliced

1 red onion, sliced

2 medium sweet potatoes

2 handfuls rocket/spinach

50g crumbled feta


1 tsp dijon mustard

1 tbsp greek yoghurt

½ lime

1 tsp extra virgin olive oil

1 tsp paprika

Salt & pepper, pinch


Pre heat oven to 200°C/gas mark 6.

Dice chicken & coat in olive oil, chilli & paprika. Bake in oven for about 20 mins or until chicken is completely cooked through.

Meanwhile, cube sweet potato & steam for about 15 mins until tender. Remove potatoes from steamer & let cool to room temp.

Whisk all dressing ingredients together in bowl & season with pinch of salt & pepper (or any other spices you like).

Place chicken, sweet potato, feta, red onion & rocket/spinach in large bowl & drizzle dressing on top. Gently mix everything together using large spoon. Serve warm or cold.


Sweet potato provides a slow, sustained release of energy to keep blood sugar levels stable. This will help reduce the typical cravings present at this time of the cycle. It is also rich in vitamin A, which helps with cell growth.
